Approximately 600 years ago I wrote a cookbook. Did you know that? You might not have known that. It was a lifetime ago. It’s called Bake It in a Cupcake and it’s cute AF.
This time of year I always share my very favorite recipe from the book, the Pumpkin Pie-Stuffed Cupcakes with Cinnamon Cream Cheese Buttercream. Ignore the fact that it’s a very out-of-date tumblr link, you should make those cupcakes. They remain amazing.
But there’s another recipe in the book that I absolutely love and still make at least a few times a year, the Cherry Pie Dark Chocolate Cupcakes with Vanilla Bean Frosting.
For Halloween, I’ve given the cherry pie cupcakes a killer makeover with an updated recipe exclusive to Snack and Destroy subscribers. Yup, I’m back on my bake-it-in-a-cake bullshit! I filled cream cheese cupcakes with oozing mini cherry pies and topped ‘em with a crime scene — tangy cream cheese buttercream stabbed with a candy knife and gushing with cherry blood.
I really love how the red filling pops against the lighter cupcake and the cream cheese frosting gives them a cherry cheesecake vibe.
Creepy. Delicious. Perfect for Halloween.
